Beef and rice. Literally that’s it. White rice, pound of ground beef, a Siete beef fajita seasoning packet if I’m extra lazy. Sour cream and cheese if I have the energy. Back in my bodybuilding/powerlifting days I’d hit 3+ eggs for breakfast and a pound of ground beef a day, minimum requirement for protein met without overthinking.
The white chicken chili from this blog - (I use the inst-pot to fry the chicken in butter + Siete fajita seasoning pack, shred it up and throw everything else on top to slow cook)
Pro tip- use Redmond Real salt. It’s pricier but it makes everything taste so much better and actually has minerals. Every single time we cook for someone new they ask what type of seasoning we’re using and it’s generally just Real salt and pepper and butter.
Egg white bites- (make an extra batch for a new mom in your life)
Several slices of chopped bacon
Cottage cheese (4-5 TBSP)
Egg white carton (16 oz)
Chives are optional but good, finely chopped onion works too
Salt, pepper, and a dash of milk or cream
Mix together and pour into lined muffin tin, makes a dozen. Bake at 350 for ten ish minutes or until done.
